Shut Up and Eat Thai Kitchen Ambassador Recipe Challenge  - Coconut Panna Cotta with Mandarin Orange Streusel

It’s sad to say but the recipe portion of theThai Kitchen Ambassador Recipe Challenge, has come to a close, however the campaign is far from over! The interpretive dance and talent programs start in a couple of days. Actually the fan votes start TOMORROW! There will be a voting app that will be posted both here and on my Facebook page where YOU will pick your favourite recipe of the past week and my winning recipe will then be put up against the winning recipes from the other bloggers across Canada in the ultimate Thai Kitchen Recipe Challenge Thunderdome. And for just voting you’ll be automatically entered into a draw to win some really awesome prizes!

Check out the recipe recap at the end of this post. On that note, I guess it’s fitting that the last recipe for this challenge… I’ll post is a dessert.

Coconut Panna Cotta with Mandarin Orange Streusel


INGREDIENTS:
– 4 tsp unflavored gelatin
– 1 ½ cup milk
– 1 can Thai Kitchen Lite Coconut Milk
– 1/3 cup sugar.
– 1 ¼ all purpose flour
– ½ brown sugar
– ½ cup softened unsalted butter
– 2 tsp Simply Asia Mandarin Orange Sauce
– Zest of one orange
– Canned mandarin oranges (optional for garnish)

DIRECTIONS:
RECIPE 7 - Coconut Panna Cotta with Mandarin Orange Streusel-7
– Dissolve gelatin in half cup of milk and set aside for 5 minutes.

– Meanwhile, on medium-high heat bring milk, coconut milk and sugar to a boil, and then add milk and gelatin solution. Once that comes to a boil again, strain and fill six small serving bowls.

– Place in refrigerator for at least 3 hours to set.

– In a mixing bowl, combine flour, brown sugar, mandarin orange sauce, orange zest and butter and blend with a hand mixer at low speed until it resembles a coarse mixture.

– Squeeze handfuls of mixture and place them on a parchment lined baking sheet and bake in a preheated 350 degree oven for 20 minutes until golden brown.

– Crumble streusel over set panna cotta

This version Thai Kitchen’s coconut milk offered enough coconut flavour without enveloping the entire dish as well as kept the panna cotta light. The incredibly fragrant streusel highlights the coconut flavour as well as great texture to each bite. I was hesitant at first because I wasn’t sure how well these two very
dominating flavours would do when paired together in the same dish. Luckily, the “lite” coconut milk was subdued enough that it took a backseat to the mandarin orange.

A fragrant and unique version of this classic Italian recipe.

  4. Squeeze handfuls of mixture and place them on a parchment lined baking sheet and bake in a preheated 350 degree oven for 20 minutes until golden brown.
  5. Crumble streusel over set pana cotta and garnish with mandarin orange slices
  6. Spoon it out with your pinky in the air.
